I think I'm just going to conclude that the answer to my question about whether any formal documentation exists for VBA in Word for Mac 2016 (or differences in VBA for 2016 vs 2011) is no, it doesn't exist anywhere. But the two VBE environments are definitely NOT identical. Entire menus worth of commands are missing in 2016 compared to 2011.
